'Creepy' Carrot Cookies

The P7 class at Alexandra Parade Primary School were winners of our Halloween-themed 'Don't Be Afraid of Your Leftovers' school competition in partnership with Scottish Business in the Community and Good Family Food. The children have been learning about rationing during WW2 and how important it was that nothing went to waste both then - and now!

Ingredients
75 g Butter (cut into small cubes)
135 g Self Raising Flour
2tbsp Light Brown Sugar
6tbsp Caster Sugar
3 Carrots, peeled and grated (about 60 grams)
1 tsp Vanilla Extract
Instructions
Line a baking sheet with baking paper
Preheat oven to 170°C conventional / 160°C fan.
Cream the butter and the sugar together with the vanilla extract.
Mix in the grated carrot.
Fold in the flour
Use wet hands to make cookie shaped biscuits and place onto prepared tin
Bake in preheated oven for 20-25 minutes until a light golden brown colour
