Fish finger tacos with lime mayonnaise

Tacos are always a family favourite and this simple dish brings together classic fish fingers with tasty hints of Mexican flavours. For little eaters, you can cut the tortillas in half to make them easier to handle, and the grown-ups can add a little hot sauce or a few chilli flakes.

1 box fish fingers
1 pack tortilla wraps
2 limes (½ for juice, 1 ½ cut into quarters)
½ red onion, finely sliced
2 or 3 spring onions, finely chopped
handful of cherry tomatoes, cut into quarters
½ tsp cumin
4 tbsp mayonnaise
1 carrot, grated
½ bunch coriander, washed, patted dry and finely chopped
hot sauce or chilli flakes (optional)
In a small bowl add the mayonnaise, juice of ½ lime, a pinch of pepper and cumin and stir to mix together.
Cook the fish fingers as you wish (grill or fry).
Lay out the grated carrots, chopped coriander, cherry tomatoes, spring onions and red onion, lime quarters, wraps and lime mayonnaise on separate bowls or plates.
Assemble the tacos with the cooked fish fingers and your favourite toppings!
