This wonderful Goulash is from The Melting Pot Cookbook by the Isaro Community Iniative.  A hearty stew-type dish that's popular in Roma cuisine this delicious pot of Goulash comes together with just a few simple ingredients, it's minimum effort for maximum flavour! It's also great for bulk cooking as it freezes well, ready to eat at a later date. Swap meat for chunky vegetables to make this a wonderful hearty vegetarian stew!

Ingredients
500g chicken/any meat, chunks
2 onions, finely chopped
3 carrots, finely chopped
2 bell peppers, seeds removed & chopped
2 cups of chopped tomatoes
250ml water
4 tablespoons paprika
50g tomato purée
Salt
Cooking oil
Instructions
Heat oil in a large pot and cook onions until soft. Remove onions and set aside.
Fry the meat in the same pot until it is brown on all sides.
Return the onions to the pot, add spices, chopped vegetables, tomato purée and water in the pan and stir.
Allow to simmer on low heat until meat is tender.
Serve and enjoy! Invite your friends to a bowl of this amazing dish! Goes well with most side dishes, from potato scones to bread.
