Red Wine BBQ-style Chicken

According to research from wine experts Laithwaites, the average British household wastes the equivalent of 2 glasses of wine a week! Leftover wine (yes, there is such a thing) that is past its best doesn't need to be poured away. Use it to make a delicious marinade, a perfect match for meat, like these mouthwatering chicken wings! 

Ingredients
12 mixed chicken thighs & drumsticks
2 tablespoons olive or vegetable oil, plus more for brushing
1 onion, finely chopped
2 garlic cloves, minced
4 tbsp ketchup
250ml red wine
2 tbsp soft brown sugar
1 tbsp chilli or hot sauce
1 tbsp dijon or English mustard
good pinch of salt & pepper
Your favourite sides to serve e.g. salads, flatbreads
Instructions
In a medium non-stick saucepan, heat up the oil and gently fry the onions and garlic.
Stir in the ketchup, red wine, sugar, hot sauce, mustard, salt & pepper.
Cook on a medium-low heat for 15 minutes, stirring frequently and until the sauce has thickened. Blitz with a stick blender and allow to cool.
Place the chicken pieces into a large mixing bowl with a little oil, salt & pepper and coat with ⅔ of the sticky sauce.
Transfer the chicken pieces to a large roasting tin and cook in the oven (preheated at 200c / 180c fan) for 35-45 minutes. Baste or brush the chicken with the leftover sauce every 10 minutes, and check the meat is cooked through before serving.
Serve with your favourite sides.
